Most of these recipes have been adapted from ones that I’ve found online or learned through friends. They’ve all been modified to suit my taste, please use them and modify them to your liking. These are mainly here for my own reference and are not intended to teach anyone how to cook.

Fried rice

4 cups rice - chilled 3 tbsp each oyster soy saucr Oil pan 2 eggs until barely curdded Wipe pan Add shrimp - cook until just done Wipe pan - recoil Add mushrooms until start browned Add frozen peas and ham Add 2 cloves crushed garlic Add rice Mix in sauces Break up clumps Add eggs n shrimp Reduce to low Add butter

Ionized salt - 2 tsp Cold water - 3oz / 88ml Buttermilk - 475ml / 2 cups Whole Wheat flour - coarse/Irish style 680g Sodium carbonate or baking soda - 2 tsp

Spread baking soda on sheet pan lined with parchment paper and bake at 450 for 1 hour to make sodium carbonate

Mix sodium carbonate into water

Airate flour Add salt Add levener Add buttermilk

Mix until dough is too thick to pour but too thin to roll

Cast iron dutch oven covered 425 half hour remove lid 20-25 minutes
